Caramel Apple Salad

Fall is the perfect time for apples. Crisp red or green; I love them all. And I can’t think of anything better to go with apples than caramel. Dreamy caramel. Add a few snickers, and some vanilla pudding and viola; a dessert (or salad) that will compliment any gathering.


Ingredients:

  • 6 Snickers Candy Bars (regular size)
  • 6 apples (any kind of apple that you love)
  • 1 package Vanilla Instant Pudding (5 oz.)
  • 1/2 cup milk
  • 1 tub cool whip (12 oz.)
  • 1/2 cup caramel topping (I make my own, but you can buy ice cream topping if you want)

Instructions:

  • Whisk vanilla pudding packet and 1/2 cup milk together.
  • And cool whip to pudding mixture and mix well.
  • Chop Snickers and apples and stir into pudding mixture.
  • Place in a large bowl and drizzle with caramel ice cream topping.
  • Chill for at least 1 hour before serving.

Homemade caramel sauce:

Stir over medium heat the following ingredients:

  • 2 sticks butter (not margarine)
  • 1 can sweetened condensed milk
  • 1 cup karo
  • 2 cups sugar
  • 1 t salt
  • 1 T vanilla

Melt these items together and boil them until they reach a softball stage, stirring constantly.  To measure a softball stage, drop a little bit of caramel nto a small glass of cold water and then pull it out with your fingers. If it stays pretty well together, you have done it. It will also be a nice caramel color.

Once you have reached the softball stage, remove the brown mixture from the heat and add the vanilla. Drizzle the carmel over the apple pudding mixture once it has cooled down. Don’t over cook the caramel as it is supposed to be a sauce.

This yummy goodness makes a delicious caramel apple treat that can pass for a salad or a dessert.
