Recipes to Celebrate National Pancake Week

When I heard it was National Pancake Week this week I figured let’s torture myself (and maybe you in the process?) and look up some yummy pancake recipes!  There is something about pancakes that makes you feel like a kid again!  All that yummy and buttery goodness just brings back wonderful memories of eating as many pancakes as you can!  If you are on a gluten-free or paleo diet, we found some delicious recipes on Pinterest as well so don’t fret!  Lots of goodness with these recipes!  Enjoy!

 

Multigrain Recipe:

 

This recipe is so tasty we use to invite the little ones (pre school days) in the neighborhood over for pancake parties and we never had any left over! I found this recipe in the cookbook Kitchen Sense by Mitchell Davis and have altered it just a bit.  It calls for 1/2 stick of unsalted butter but we use 1/4 of a stick and it tastes just fine!  Plus, it has some healthy ground flax seed and not much sugar so it is fairly healthy!  Recipe found here.

Blueberry Delight:

If you like blueberry pancakes, this looks like a winner to me!  She claims it is the best blueberry pancake recipe around! Found on Baker By Nature.

Cinnamon Apple Pancakes

The Six Sisters website is great and they offer a ton of fantastic recipes.  This cinnamon apple pancake recipe looks delicious – and healthy! Found on Six Sisters Stuff.

Grain-Free Coconut Flour Pancakes:

You know I am always toting the benefits of coconut oil and flour!  I put 1/4 teaspoon of coconut oil in my coffee every day – it tastes really good and it helps speed up your metabolism (that’s always a good thing). This recipe calls for healthy coconut flour and can be found on Yummy Inspirations.

Paleo Pancakes:

These pancakes look just so yummy!  And I do feel better eating a Paleo Diet so might have to try this one out next time!  Recipe found on Paleo Newbie.
