What’s For Dinner? Roasted Garlic Chicken with Thyme

Yesterday, a friend told me about this great Roasted Garlic Chicken Recipe that her whole family loves and that it is really easy to make.  I am always up for simple and healthy recipes that my family will actually eat.  My husband is not a big meat or seafood eater (yes, makes for interesting dinners) so I have to look for recipes that he might like as well.  My daughter is fairly easy to please as long as it isn’t too spicy.  When I heard what was included in this recipe: chicken, potatoes, garlic, tomatoes, fresh thyme, olive oil, salt and pepper  I was sold.  That is a fairly easy shopping list so off we went to the store and we were in and out in about 10 minutes.

 

The recipe comes from Jessica Seinfeld’s website do it Delicious and she provides a step by step tutorial on her site.  It is so easy to put together and I think it took me less than 10 minutes to prepare, but boy did it smell amazing!  I like to keep the skin on my potatoes (the skin contains a lot of good vitamins) so I cut up about 10 medium sized Yukon Gold potatoes.  I do wish I had cut more because those went really quick!

Put them in a large roasting pan, rinse the pint of grape tomatoes and throw them on top.  Mix in the 2 tablespoons of (cold pressed is best) olive oil,  10 springs of fresh thyme, salt and pepper and toss with your hands.  You won’t believe how amazing these simple ingredients smell together!

Rinse your chicken and pat dry.  We prefer white meat so next time I plan to buy four chicken breasts instead of the thighs – but if you family likes dark meat add in some thighs and drumsticks!

 

Salt and pepper the chicken and then nestle them into the dish.  Make sure the oven is preheated to 425 degrees Fahrenheit and bake (uncovered) for 50-60 minutes.  I checked the chicken at around 40 minutes and left in for another 10 minutes – but you know your oven best!  Make sure the potatoes are cooked all the way through.  My friend mentioned that one time she didn’t cut the potatoes small enough and they were still a little hard even though the chicken was finished cooking, so just make sure they are about two bites size.

My family did really enjoy this super easy meal and I even had leftovers for lunch today!  That’s always a plus in my book!   Enjoy!  Recipe can be found on do it Delicious.
