What’s for Dinner :: Italian Chopped Salad

 

 

With summer upon us it can be tough finding the time (or energy) to make dinner so I have been on the hunt for really simple yet healthy meals I can make in a moments time. Last week I picked up a premade Italian Chopped Salad  at the grocery that included all the makings (Romaine Lettuce, Brocolli, Red Cabbage, Green Onions, and Parsley) for a yummy Italian salad.  I wasn’t sure how much salami, etc., was included in the package so I went ahead and bought some nitrate-free salami (two types), mozzarella cheese, nitrate and MSG-free turkey and some grape tomatoes.  I already had the dressing and Greek olives on hand.  The meal took me less than 5 minutes to put together – just needed to chop the cheeses and meats and that was it!  It turned out really delicious so I thought I’d share this simple summer meal the whole family will love!

You will need:

 

Taylor Farms Italian Chopped Salad pre-packaged salad (or look for another brand that offers something similar)

Nitrate-free salami

Mozzarella cheese

Nitrate/MSG-free turkey slices

grape tomatoes

Italian Dressing – I like Newman’s Italian Salad Dressing

Greek olives

Sea Salt and Pepper to taste

Empty the salad bag into a pretty bowl. Slice the meats into strips and chop the mozzarella ball into little bite sized squares.  Slice the grape tomatoes and Greek olives and arrange as you like.  The meat they offer was a tad small to feed a family of three or more so I would recommend you buy some extra meats to put on top.  Next time I plan to buy two pre-made salads as this meal is perfect for a work lunch!  Enjoy!
