Recipe :: Easy and Healthy Mexican Salad Bar

 

One of my favorite meals is a really delicious salad.  In fact, most days I could just eat a salad, but with all the trimmings! Though some days I am in the mood for something hearty (like meatloaf) – but that’s another recipe post!  My two favorite salads are Nicose and Mexican-style salads.  Our family is really making an effort to eat at home more these days because frankly, it just tastes better and much more economical! This recipe is for those days when time is short and dinner is coming up!  On our way out of the theater the other night I picked up a Power Plate at Sharkey’s that included 10 oz. of natural chicken and three servings of brown rice for under $10 that was enough for the whole family.  This easy recipe would make a great lunch as well!  Enjoy!

 

I saw this DIY Salad Bar on Instagram and thought what a  clever and fun idea for dinnertime with the family!

 

You will need:

Round or rectangular platter (this polka dot platter is from French Bull)

10 oz. cooked natural chicken (I picked ours up at Sharkey’s due to time restraint)

2 cups of cooked brown rice

1 red and yellow pepper – chopped

1/2 to whole ripe avocado – chopped

2 heirloom tomato (I used one yellow and one red tomato) – chopped

canned corn – rinsed

black beans – rinsed

Handful of fresh mushrooms – sliced

2 carrots – sliced

Place all the goodies on your platter along with a bowl of your favorite ranch dressing. Put your rinsed Romaine Lettuce in a bowl so everyone can serve themselves. I placed the corn and black beans on a small French Bull platter.

Voila!  Dinner is served!
