Homemade Linguine and Clams Recipe
Last night my in-laws treated me to a favorite recipe that’s been in their family for almost 50 years and I was in heaven! Linguine and clams is one of my all-time favorites and when they heard that I love this meal they made a huge dish of it for all of us to enjoy. My father-in-law received a recipe gift box filled with recipes (remember when they use to give those out?) when he was working for a bank over 40 years ago as a giveaway for their employees. Though not all the recipes stuck around this one is in their top 5 and I can see why.
If you like linguine and clams you’ll love this delicious yet simple family-approved recipe! Add in some homemade garlic bread, an Italian Salad and you are set! Enjoy!
Linguine and Clams:
1/4 cup olive oil
2 tbsp. butter or margarine
2 cloves garlic, crushed (my mother in-law says she usually adds 4)
1/4 cup finely chopped onion
1/2 tsp. salt
1/4 tsp. pepper
pinch of oregano
2 tbsp. chopped parsley
4 or 5 medium tomatoes, peeled, seeded & chopped (or 28 oz. diced tomatoes – drained)
3 7-1/2-oz. cans chopped clams, drained
2 cups clam juice
Optional: fresh clams (be sure they open completely during cooking, otherwise toss them)
1 lb. linguine, cooked
Saute garlic and onion in oil and butter. Add salt, pepper, oregano, and tomatoes. Simmer 10 minutes. Add clams and clam juice in sauce. Reheat, do not overcook clams. Serve over linguine. Makes 6 servings.
