Delicious Grilled Sea Bass Quesadilla Recipe
Back in the day when most of our friends didn’t have kids, we would meet up quite a bit for dinner and drinks. I can still remember playing Cake and Beck on rewind late into the night. One of my favorite dinners was the one our fisherman friend, Mike would make us by the poolside. His dad and him would go deep sea fishing quite a bit and he would bring us fresh sea bass and grill it on the barbecue and then place the fish in tortillas with some cheese. They were the best sea bass quesadillas. I have no idea why I have waited to make this meal again as sea bass is one of my absolute favorite fish to eat. This recipe is really easy to make and you won’t be disappointed! It is such the perfect summer meal to enjoy with friends and family.
What Your Will Need:
Make sure you buy the freshest piece of sea bass possible is key to this yummy meal. I picked up a pound at our local Farmer’s Market yesterday and couldn’t wait to cook it up. The meal was SO good and I just had to share it with you all.
One Pound of Sea Bass makes about 4 quesadillas
Heat up the barbecue to medium – about 400 degrees Fahrenheit
Cover the sea bass with a light layer of cold-pressed olive oil and some salt and pepper. Add two slices of lemon and wrap up it up in tin foil. Steaming the fish helps keep it moist and won’t dry up.
Place on the barbecue for about 12 minutes.
Once the fish is done, heat up a flour tortilla. Flip onto other side and add a handful of quality cheddar cheese blend.
Add some fresh salsa, fold over and voila – you are set! Add some refried beans, rice and some chips on the side and you have a complete and delicious meal to enjoy in your backyard this summer.
