The Perfect Meal :: Warm Salmon Nicoise Salad
One of my favorite meals is a Nicoise salad because it has a great combination of goodies – great sources of protein – canned tuna and eggs, greens, olives and much more! When my husband offered to make me this salmon version I was super excited! In my opinion this is the perfect meal – especially on a warm summer day! The recipe we found on The Wok of Life is really easy and took like 10 minutes to prepare (minus grilling of course) but overall, a very nutritious meal with very little prep work. Enjoy!
For the Dressing:
(You can also just use a yummy Italian dressing like Paul Newmans!). But if you are up to making this dressing – it’s super yummy!
1/3 cup olive oil
2 tablespoons lemon juice
2 tablespoons white wine vinegar or champagne vinegar
1 tablespoon minced shallot or red onion
1 clove garlic, minced
2 tablespoons chopped basil
2 tablespoons chopped scallion
1 tablespoon capers (or olives)
1 tablespoon Dijon mustard
1 teaspoon sugar or honey
salt and pepper
For the Salad:
4-6 eggs
1 pound small red potatoes, halved or quartered
1 bunch thin asparagus spears or green beans
Olive oil
Salt and pepper
16 oz. wild salmon fillet
Assorted lettuce, washed and dried
3 medium tomatoes, cut into wedges
Start by making the dressing. Combine all dressing ingredients into a bowl. Mix well.
In a small pot, cover the eggs completely with cold water. Bring to a boil. Once it’s boiling, remove the pot from the heat. Allow the eggs to sit in the hot water for five minutes and immediately transfer the eggs to a bowl of ice water. Set aside.
Boil the potatoes until fork tender.
While this is going on, season your salmon with salt and pepper, garlic and some olive oil and a couple slices of lemon.
Wrap in foil and place on the grill, medium heat, for about 15 minutes, turned halfway through. Grill the asparagus in some oil and salt and pepper until tender but still crispy.
Place on top of the mixed greens, add the asparagus, sliced eggs, cooked potatoes and tomatoes, capers. Add dressing and salt and pepper to taste. Enjoy!
