Recipe :: Delicious Lemon Bars with Shortbread Crust

 

 

One of the best things about springtime is all the delicious and fresh fruit found at our local supermarkets!  Melissa’s Produce sent me a box of some of their tasty citrus fruits including Ojai Pixie Tangerines, Key Limes, Kumquats and gorgeous and juicy Meyer Lemons to enjoy and inspire me to do some baking!.There are so many recipes that call for a zest of lemon or lime.  Or imagine a tasty tangerine scone on a Sunday morning.

 

 

One of the best features of Melissa’s Produce is they provide a ton of recipes to try.  You can visit their website to see what recipes go best with their produce.  We were in the mood for something lemony, so we made this super easy lemon bar recipe we found on tastes better from scratch dot com. If you love lemons as much as we do, be sure to try out this simple yet super tasty Lemon Bar recipe with buttery shortbread crust.  They make the perfect pool or spring party treat.

 

 

Ingredients

 

 

Shortbread Crust

1/2 cup butter, room temperature

1/4 cup powdered sugar

1 cup all-purpose flour

dash of salt

Lemon Filling

Zest of one large lemon

1 cup granulated sugar

3 Tablespoons fresh lemon juice

3 Tablespoons all-purpose flour

1/2 teaspoon baking powder

2 large eggs

Instructions

Preheat oven to 350 degrees Fahrenheit.  Line the bottom of a 8 x 8 inch pan with parchment paper, or grease with cooking spray or butter and set aside.

 

Crust:  In a mixing bowl or bowl of a stand mixer, cream together the butter and powdered sugar.  Slowly add the flour, salt and mix on low speed until combined.
Take the dough out of the bowl and press evenly into the pan.  Bake for 10 minutes on 350 degrees Fahrenheit and remove from the oven and set aside.
Lemon Filling: Mix the lemon zest and sugar in a mixing bowl. Add the lemon juice, flour, baking powder, and eggs.  Mix until well combined and the sugar is dissolved.  Pour the mixture over the crust.
Bake at 350 degrees F for 20-30 minutes or until the filling has set.  Try a toothpick in the middle to test.  Remove from the oven and let cool.

 

Sprinkle powdered sugar before cutting and serving.  We put some lemon slices on top to make it look extra fancy!  Store the remaining bars in the refrigerator.
