We had a chance to check out an early screening at El Capitan Theater last weekend and both my daughter and her friend really enjoyed the movie!  Belle is not your typical Disney Princess and I think because she is so independent and strong she appeals to a lot of kids.  Especially those who love reading!  The movie is actually quite funny and spectacular.  Mrs. Potts and her son Chip were my favorite characters besides Belle and the Beast.  But everyone in the movie are quite amazing and it is a star-studded cast that is for sure.

Instructions
Cupcakes

Sift together dry ingredients, set aside.
Preheat oven to 350 and line cupcake tins with paper liners.
In bowl of mixer with paddle attachment add butter and mix until lighten and fluffy, about
3 minutes.
Add sugar and mix another 2 minutes.
Add applesauce and eggs. Mix well.
Add 1/3 of flour mixture, when almost incorporated add 1/2 buttermilk and mix. Once
almost mixed in add 1/2 of the remaining flour, again mixing until almost incorporated
add the rest of the buttermilk, mix and finally add the last of the flour mixing until all the
dried ingredients are mixed in.
Fold in vanilla scraping all the way to the bottom to be sure all ingredients are mixed in.
Scoop batter into prepared tins filling about 2/3 of the way. Bake approx 20 minutes,
rotating tray after 10 minutes, until golden brown and tops spring back to the touch. If
uncertain, insert a toothpick into center and if it comes out clean, cupcakes are done.
Remove from cupcake tins and cool completely on wire rack.

Buttercream
In bowl of mixer with a paddle attachment add butter and cream cheese. Mix well until
creamy and fluffy, about 3 minutes.
Add 1C powdered sugar with mixer on low and gradually increase speed until smooth.
Add remaining sugar in 1c increments until all mixed in.
Add rose water and vanilla and mix well.
Check the flavor and adjust as needed. If rose flavor is too strong add 1/4c powdered
sugar and 1/4 vanilla. If the texture is too stiff, add 1 Tbsp milk until buttercream is
creamy and thick enough to hold shape but not so stiff the it cracks.
