A Real Crowd Pleaser :: Raspberry Cream Cheese Dip

I don’t know about you but with this ridiculous heat wave we are having in Southern California, the idea of cooking in a hot kitchen does not really sound that appealing!  Granted, not everyone’s AC is broken (sigh) but I wanted to create something yummy for the family to enjoy on this hot summer night.  We were asked  to create a delicious recipe centered around the Breton Artisanal Cranberry and Ancient Grains crackers which, truthfully, taste amazing just by themselves!  In fact, when I was preparing this recipe, my daughter came into the kitchen and asked for a snack.  I told her to try these new crackers and she took one bite and next thing I see walking out of the kitchen with the box in her hand.  What can I say, the kid is growing and eating us out of house and home, but that is about as a genuine recommendation as you can get!   Dare is a family owned business that’s been in business for over 120 years so they must be doing something right! With Breton’s variety of flavors and textures, there are endless ways to enjoy them for any occasion – from simple appetizers to a delicious crust, or simply eating them right out of the box, there’s a perfect Breton cracker for everyone.

 

Next time you don’t feel like doing much cooking, try this delicious Raspberry Cream Cheese Dip.  Be sure to grab a couple boxes of Breton Artisanal Cranberry and Ancient Grains crackers to go along with the meal!  The raspberries could be subsititued for cranberries as well.  Use the same measurements for the rest of the ingredients.  This dip would be great during the holiday season as well!  Like I said, it is a real crowd pleaser that even the kids will love!  It isn’t really that spicy and you can make it more or less spicy depending on your preference.

 

 

Raspberry Cream Cheese Dip

Ingredient List:

12 ounces frozen raspberries – you can also use fresh cranberries

5 green onions, chopped

1/4 cup chopped cilantro

1 jalapeno pepper, seeded and finely diced

1/8 cup sugar (more or less to taste) if using cranberries – 1/2 to 3/4 cup sugar is recommended

1/2 teaspoon cumin

2 tablespoons lemon juice

1/2 teaspoon salt

2 8-ounce packages cream cheese, room temperature

 

Directions:

Place the raspberries in your food processor or blender.  Pulse to give them a rough chop.  Add the green onions, cilantro, jalapeno, sugar, cumin, lemon juice, and salt.  Pulse until all the ingredients are combined and choppy – not pureed though.  It is recommended to refrigerate for a minimum of 4 hours (up to 24 hours if you desire).

 

Place the block of cheese on a platter or cake stand.  Pour the raspberry sauce over the top generously.  Add a couple leaves of cilantro and fresh raspberries.  Place some yummy Breton Cranberry and Ancient Grains around the dip and you are set!  This really is a great addition to any party and we rather enjoyed our makeshift family dinner that didn’t entail me sweating in the kitchen!

 

Put some cheese, your favorite meats, some fruit and vegetables and enjoy with these delicious crackers.  Hope you are enjoying the last few weeks of summer!
