Blueberry and Lemon Pancakes

Recently I picked up a 1953 edition of The Joy of Cooking at a local estate sale. I love that it is so well-loved and that the previous owner (a Norwegian woman) wrote notes throughout and added tabs of her favorite recipes. I’m trying to tap into Julia Child and attempt various recipes from this tried-and-true recipe book! Melissa’s Produce sent me some of their delicious strawberries, blueberries and raspberries along with ready-made crepes and dessert sauces.

For Valentine’s Day why not serve some pipping hot blueberry pancakes and the gang can add the dessert sauce of their choice! Don’t forget to have some Grade A maple syrup on hand as well along with some fresh fruit.

Here’s the best pancake recipe around!

Blueberry Pancakes:

Makes about Eight 3 Inch Cakes

Sift:

1 1/4 cup all-purpose flour

Resift with:

1/2 teaspoon salt

3 teaspoon any baking powder

1 tablespoon sugar

2 tablespoons powdered sugar – optional

Beat:

1-2 beaten eggs (I like mine with a bit more protein but you can decide)

Add and beat:

1 cup milk

1/2 teaspoon vanilla (and/or add 1/2 teaspoon grated lemon rind – Melissa’s Produce Meyer’s Lemons are the best!)

1/2 cup fresh blueberries – gently fold in.

Make a well in the sifted ingredients. Pour in the liquid ingredients. Combine the ingredients – don’t worry about the lumps; they will take care of themselves.

Heat a skillet. Place a few drops of cold water on the griddle. If they dash about it is ready for use.

Grease it with a pat of butter. Add a small quantity of the batter. Tip the skillet to make sure the butter covers the bottom of the pancake. Cook over medium heat. When it starts to bubble on top and the edges are turning a golden brown, flip to the other side. Use a little butter for the other side. The second side will take about half the time as the first side. You can keep the cakes hot in a covered skillet in the oven.

Add some blueberries, strawberries and raspberries for a colorful meal! And don’t forget to try out Melissa’s Produce Dessert Sauces. My daughter can’t seem to get enough of them! She puts them on her ice cream, pancakes, waffles and anything else she can think of that would taste extra good with the chocolate or raspberry sauce!
