    Grand Cayman Adventure

    Whenever I think about Grand Cayman I flash back to the movie ‘The Firm‘. Money Laundering, power, and greed are the things that come to mind. Funny how something from a movie can stay with you for so long. Grand Cayman is a beautiful island about 22 miles long. For such a small place it boasts just under 600 bank-and-trust companies. Pretty impressive for such a tiny hideaway. According to wikipedia, 43 out of the 50 largest banks in the world are found on Grand Cayman.     Comfort Food: One Pot Sausage Casserole

    Sometimes we all need comfort food. Hearty, warm and satisfying, it’s easy to make and easy to eat. When the nights get cold and it’s dark outside I love to make this one pot sausage casserole.   1 onion diced 2 cloves garlic finely diced 200g bacon 8 sausages ¼ cup white wine 1 celery stick 1 carrot 1 cup mushrooms 1 punnet cherry tomatoes 1 can diced tomatoes     Fry onions and garlic in olive oil. Add diced bacon and sausages and fry gently until cooked through. Add the white wine and stir. Slice carrot, celery, and mushrooms and add to the pan. Add cherry tomatoes, canned tomatoes…
