Stuffed Bell Peppers
Happy Summer! I hope you are enjoying your summer and getting some sunshine! Last week Melissa’s Produce sent over some fresh summer fruit and vegetables and they had the most gorgeous red bell peppers that were calling my name to make some stuffed peppers! I have to admit I haven’t made stuffed bell peppers before! I have always wanted to and found this easy recipe off Food Network and made some adjustments which I have included. Bell peppers are low in calories and exceptionally rich in vitamin C and other antioxidants, making them an excellent addition to a healthy diet. One medium-sized red bell pepper provides 169% of the Reference…

Prosciutto and Peach Arugula Salad
Now that summer is upon us I have been on the hunt for some salad recipes to try out using delicious fruit that is plentiful this time of year. One of my favorite fruit are peaches. They just taste like childhood, summer pool parties and sunshine. Melissa’s Produce sent a box of their delicious produce that included some fresh peaches. Peaches are thought to have originated in China more than 8,000 years ago and offer an array of health benefits including improved digestion, smoother skin, and allergy relief! I wanted to pair the fresh peaches with prosciutto as my teen loves this cured meat and I wanted to see if…

Strawberry Rhubarb Cheesecake Bars
When I received some rhubarb this week from Melissa’s Produce I wasn’t quite sure what to do with this… is it a fruit or vegetable, it’s a vegetable but rhubarb is officially classified as a fruit by the U.S. Department of Agriculture (USDA) ), and how best to cook with it?! Rhubarb is in season now and is usually used in desserts. It tastes similar to a granny apple yet you will find it tastes best baked and mixed with a sweet fruit. I came across this recipe from Taste of Home and the reviews were glowing. Gosh, I know why now after making it. I wasn’t sure if I made…

She, like myself, is always looking to stay afloat in regards to her health and asked me if I had tried celery juicing. I had picked up Dr. Anthony Williams Liver Rescue book a few months ago but hadn’t had the chance to read it read though I remembered he recommended celery juicing so my interest was peaked! My friend went on about how it changed her life, she was no longer getting the migraines she use to get a couple times a month…

Blueberry and Lemon Pancakes
Recently I picked up a 1953 edition of The Joy of Cooking at a local estate sale. I love that it is so well-loved and that the previous owner (a Norwegian woman) wrote notes throughout and added tabs of her favorite recipes. I’m trying to tap into Julia Child and attempt various recipes from this tried-and-true recipe book! Melissa’s Produce sent me some of their delicious strawberries, blueberries and raspberries along with ready-made crepes and dessert sauces. For Valentine’s Day why not serve some pipping hot blueberry pancakes and the gang can add the dessert sauce of their choice! Don’t forget to have some Grade A maple syrup on hand…
