My daughter gets very excited when I ask her on a Saturday or Sunday morning if she wants pancakes for breakfast. I really like the Multigrain recipe I found in Kitchen Sense by Mitchell Davis but this morning I thought I’d try the buttermilk recipe. This is my go-to meal when I am not sure what to make for dinner. It is really easy to put together and you probably already have the ingredients in your refridgerator so no need for an extra trip to the grocery store! That’s always a plus in my book! You can use a pie crust if you are looking for a more hearty meal but I prefer the crustless frittata since you are tasting the eggs, spinach and bacon more without the crust.
