Peanut Butter Cookies: These are so more-ish and yummy. They make a delicious after school snack for the kids, or a tasty treat to go with your afternoon tea or coffee. You will need: 125 g butter (softened at room temperature) ½ cup crunchy peanut butter 1/3 cup brown sugar 1/3 cup white sugar 1 egg 1 1/2 cups self-raising flour peanuts for decoration Directions: In a bowl mix together the butter, peanut butter and sugars. Last year I did research for a post I wrote for a community website about the hungry in America. I was absolutely shocked at the number of children in the states who go to bed hungry. In the state of California, the Childhood Food Insecurity Rate is at 26.8% which equates to 2,453,770 children. These numbers just break my heart and I make it a point to drop off canned goods at our local food bank with my daughter as often as I can. Recipe:: Stay Hydrated with Fruit Flavored Water
Homemade Fruit Flavored Water: I love flavored water but I don’t like the added sugars or sweeteners that you find in the store, so I just make my own. It’s very easy. Just gather some fruit and some herbs and you’re ready to go. For this water I made an all Citrus, (no herbs) mixture. It’s a great picker-upper for those coming warm summer days. If your kids are used to sugary drinks, they probably won’t take to it at first, but give them some time and they will come to love the sweet natural flavors without the extra sugar. Gluten Free Frozen Yogurt Fruit Bites
I love to have fun snacks for my kids that are healthy as well as tasty. I also look for snacks that are easy to make. Since I eat gluten free, I try to find snacks that will work for me as well as for my kids. For this snack, I cut up some fruit and dipped the small bites size pieces in Greek Yogurt. I used honey flavored, but you can use vanilla, or plain yogurt too. Greek Yogurt is a little thicker, so I find that it works betters than regular yogurt.
