One of my favorite meals is a Nicoise salad because it has a great combination of goodies – great sources of protein – canned tuna and eggs, greens, olives and much more! When my husband offered to make me this salmon version I was super excited! In my opinion this is the perfect meal – especially on a warm summer day! We have been enjoying quite a few shrimp recipes this summer! Seafood just sounds better during the hot summer months doesn’t it? And shrimp is pretty affordable – especially if you buy it frozen!
