What’s For Dinner? Spinach, Cheese and Bacon Frittata
This is my go-to meal when I am not sure what to make for dinner. It is really easy to put together and you probably already have the ingredients in your refridgerator so no need for an extra trip to the grocery store! That’s always a plus in my book! You can use a pie crust if you are looking for a more hearty meal but I prefer the crustless frittata since you are tasting the eggs, spinach and bacon more without the crust. But both are great meals for a special day such as Mother’s Day and easy enough for the kids to help out with. Enjoy! …

The Teen Hearing Loss Epidemic
Hearing loss in teens is becoming an epidemic in this country, with 1 in 5 teenagers measured as experiencing some form of hearing loss in 2010 (the date of the most recent study). My guess is that the numbers are much higher today given the ubiquitous use of earbuds and the frequent exposure that children have to loud noise at parties, movies and other venues. This is of tremendous concern to me because I have an adult-onset genetic hearing loss, and I worry that I may have passed it onto my two children. We won’t know for 15 years or so, but I require my children to protect their…

What’s For Dinner? Lentil, Bacon and Vegetable Soup!
This is one of my favorite soup recipes because really, what’s not to like about lentils, bacon and vegetables? I am such a fan of lentils I am always on the lookout for a recipe that calls for them. This soup is really easy and you can sneak in some extra vegetables for the kids! I picked up a basket of fresh vegetables at our local farm stand and was inspired to make my favorite soup tonight. If you like lentils and fresh vegetables I promise you will love this soup! It is great anytime of year and even my picky eater (my husband) likes…

RFP Testing Provides a Safer Sporting Environment for Athletes
“The King-Devick Test is beneficial to me because it’s a sideline objective test. It’s easy to use and allows me to have another sound backing in my assessments of a head injury. Since I have been involved with the K-D Test, I have had nothing but positive outcomes. The athletes seemed to have taken well to it, and it’s not overwhelming to implement within an already established head injury protocol. All-in-all the King-Devick Test has proven its worth by its ease of use, validity, and time-efficient objectivity.” ~ Rickey Perales, ATC, Head Athletic Trainer at St. Laurence High School As a parent I had my reservations about my daughter playing…

What’s For Dinner? Roasted Garlic Chicken with Thyme
Yesterday, a friend told me about this great Roasted Garlic Chicken Recipe that her whole family loves and that it is really easy to make. I am always up for simple and healthy recipes that my family will actually eat. My husband is not a big meat or seafood eater (yes, makes for interesting dinners) so I have to look for recipes that he might like as well. My daughter is fairly easy to please as long as it isn’t too spicy. When I heard what was included in this recipe: chicken, potatoes, garlic, tomatoes, fresh thyme, olive oil, salt and pepper I was sold. That is a fairly easy shopping list so…
