Delicious Homemade Cheese Enchiladas
Growing up in southern California you would think that naturally I had made homemade cheese enchiladas! But I hadn’t until this past weekend and all I could think was WHY?! They are so easy to make and like most things homemade, taste much better then when eating out. This is such an easy meal to put together that the whole family will enjoy and would also be great to bring to your next potluck! Enjoy! You will need: Cheddar Cheese – grate a couple handfuls Cotija cheese – to sprinkle over the top Corn Tortillas Enchilada Sauce – 15 oz. can Optional: Spanish rice – we love the…

Slow Cooker Vegetarian Tortilla Soup
Tis the season for soup! Though I love to eat soup all year long (our local Pho place knows my daughter and I by name) and we are big fans of Ramen, Vietnamese soup, vegetable soup… heck, I don’t think I’ve come across a soup I didn’t like. We wanted to try a new soup and came across a yummy recipe for Mexican Tortilla Soup. We tweaked it a bit and I have to say it is one of my favorite soups we’ve made so far! Super easy if you are short on time. Just put everything in the slow cooker on high for three hours and you will…

Thanksgiving Books and Recipes to Share with the Kids
Image courtesy of Old Design Shop It’s almost Thanksgiving! Tis the season to be thankful! It’s always time to be thankful, of course, but I love this time of year because many people take the time to remind themselves and share with others what they are thankful for. This is a time to reconnect with my kids and discuss what we have to be thankful for. Instead of having a sit-down conversation, we share our thoughts while we’re in the kitchen baking and trying new recipes. And we read stories together. Stories that teach us about the challenges of others, the struggles of the past, and joy and…

Circus Trix OC Offers An Amazing Indoor Experience
Birthday Celebrations: This past month we hosted a belated birthday party for my daughter. When her birthday came around in July we just had so much going on we didn’t have the time to organize a birthday party for her. Mind you, we did celebrate with the family, but kids like to invite their friends to celebrate their day. I discovered Circus Trix OC from another mom blogger and took my daughter and one of her pals there over the fall break and boy did the kids loose their minds! There is SO much for them to do and I love that I can sit upstairs and see them…

Date Night Just Got Better with the new app Movies Anywhere!
This weekend we enjoyed a date night with the new app Movies Anywhere for a ‘movie night in’. We decided to try out the movie LIFE which is a Science-fiction thriller directed by Daniel Espinosa. Starring Jake Gyllenhaal, Rebecca Ferguson and Ryan Reynolds, LIFE is a space thriller about the discovery of intelligent alien life. I am a huge fan of anything Sci-fi and this movie doesn’t disappoint! The ending was so shocking it made me want to see what happened next in this gripping story! PLEASE make LIFE 2 Mr. Espinosa and Skydance Media! You might want to check it out if you like this genre. One of the features I really like…
