With summer upon us it can be tough finding the time (or energy) to make dinner so I have been on the hunt for really simple yet healthy meals I can make in a moments time. Last week I picked up a premade Italian Chopped Salad at the grocery that included all the makings (Romaine Lettuce, Brocolli, Red Cabbage, Green Onions, and Parsley) for a yummy Italian salad. A Patriotic Ice Cream Sandwich: The Fourth of July is one of my favorite holidays because we can just sit back and enjoy each other with no pressure of gift-giving (yes, this can be a little stressful don’t you think?). What’s For Breakfast :: Buttermilk Pancakes
My daughter gets very excited when I ask her on a Saturday or Sunday morning if she wants pancakes for breakfast. I really like the Multigrain recipe I found in Kitchen Sense by Mitchell Davis but this morning I thought I’d try the buttermilk recipe. If you don’t have some buttermilk in the fridge – don’t fret – just add in some sour cream to get the same effect! Enjoy your weekend lovely dandelion moms and dads! What’s For Dinner? Spinach, Cheese and Bacon Frittata
This is my go-to meal when I am not sure what to make for dinner. It is really easy to put together and you probably already have the ingredients in your refridgerator so no need for an extra trip to the grocery store! That’s always a plus in my book! You can use a pie crust if you are looking for a more hearty meal but I prefer the crustless frittata since you are tasting the eggs, spinach and bacon more without the crust. This is one of my favorite soup recipes because really, what’s not to like about lentils, bacon and vegetables? I am such a fan of lentils I am always on the lookout for a recipe that calls for them.
