    The last six months I have listened to my friends rave about their “lemming” pot. I would read and listen intently and never really thought about it. To me, I thought it was for “larger families” and not my small one.     Comfort Food: One Pot Sausage Casserole

    Sometimes we all need comfort food. Hearty, warm and satisfying, it’s easy to make and easy to eat. When the nights get cold and it’s dark outside I love to make this one pot sausage casserole.   1 onion diced 2 cloves garlic finely diced 200g bacon 8 sausages ¼ cup white wine 1 celery stick 1 carrot 1 cup mushrooms 1 punnet cherry tomatoes 1 can diced tomatoes     Fry onions and garlic in olive oil. Add diced bacon and sausages and fry gently until cooked through. Add the white wine and stir. Slice carrot, celery, and mushrooms and add to the pan. Add cherry tomatoes, canned tomatoes…
