I wish I could say I came up with this recipe all by myself but this delicious sandwich idea comes from one of my favorite sandwich cafes here in town. During my visit to Chicago this past May, I was determined to try out a couple restaurants famous for Chicago-style deep dish pizza and hot dogs. Back in the day when most of our friends didn’t have kids, we would meet up quite a bit for dinner and drinks. I can still remember playing Cake and Beck on rewind late into the night. One of my favorite dinners was the one our fisherman friend, Mike would make us by the poolside. His dad and him would go deep sea fishing quite a bit and he would bring us fresh sea bass and grill it on the barbecue and then place the fish in tortillas with some cheese. What’s For Dinner? Spinach, Cheese and Bacon Frittata
This is my go-to meal when I am not sure what to make for dinner. It is really easy to put together and you probably already have the ingredients in your refridgerator so no need for an extra trip to the grocery store! That’s always a plus in my book! You can use a pie crust if you are looking for a more hearty meal but I prefer the crustless frittata since you are tasting the eggs, spinach and bacon more without the crust.
