Recipe :: Mini Frittatas make a great on-the-go meal
These cute little mini frittatas are such a great on-the-go meal. I had one on my way to helping out at my daughter’s school this morning and my husband took a couple for lunch today. The kids will love it too especially if you mix in their favorite cheeses! Spinach, Bacon and Cheese Mini-Frittatas 1/2 cup grated cheddar cheese 1/4 shredded Parmesan cheese handful of chopped spinach 1/2 cup goats milk three to four slices of cooked bacon chopped or soy bacon if you want it to be a vegetarian dish. 12 eggs salt and pepper to taste Beat eggs together in a separate bowl. Delicious Spinach and Beef Lasagna Recipe
Years ago I had a friend tell me she’d make homemade lasagna all the time using the no boiling lasagna noodles and that it tasted great! Inspired, I ventured to try to make this rather intimidating dish. It was intimidating to me since it seemed so difficult to make but using the no boiling noodles makes all the difference in the world! Since then, we make this dish every once in a while and last night we whipped it up within 20 minutes! It is really tasty with the spinach and fresh herbs and you’ll probably have leftovers for lunch the next day. Here’s our favorite recipe! You’ll…

Spaghetti Pie Recipe
Ahhhh, pasta! I love all things with pasta and cheese. So does my daughter. My son eats nuggets. And tenders. A few other items but basically he’s going to cluck one day *lol* From lasagna (roll-up’s too) to manicotti and all the in-betweens. I make an awesome baked spaghetti too – there is a difference between spaghetti, baked spaghetti and spaghetti pie. Making any of those with my daughter takes me back to the summer’s I spent up north with my Gramps. He was a great cook and I spent hours upon hours with him in the kitchen. Now I get the same joy teaching my daughter these recipes –…

Delicious Chicago-style Hot Dog Recipe
During my visit to Chicago this past May, I was determined to try out a couple restaurants famous for Chicago-style deep dish pizza and hot dogs. I had never had a traditional Chicago dog so I really didn’t have any expectations! I’ve always been a ketchup kind of girl so I was in for a nice treat. Let me say this is the only way to eat a hot dog now. We duplicated this delicious style hot dog at home and it was super easy. You can mix it up a bit. Like some people like to put lettuce or cucumber slices on the dog, but by no means…

Still Using the Power Pressure Cooker (Pt 2)
Most of you know if you read my last post about the Power Pressure Cooker XL that I am experimenting and trying some of my tried and true – regular oven/stove top made recipes in it. Obviously, I am still using it (almost daily) and I’m still in awe of it and daily feel as if someone gave me magic beans! I still love being a “lemming” / having a “lemming pot” and the best part is that the kids are really enjoying – and I mean REALLY enjoying their food too! Never has food tasted as flavorful before. I mean I can cook and felt like I was a…

No Cooking Under Pressure with the Power Pressure Cooker XL
The last six months I have listened to my friends rave about their “lemming” pot. I would read and listen intently and never really thought about it. To me, I thought it was for “larger families” and not my small one. Then one night after the holidays were in the rear-view mirror I woke up to the tele (yes, I’d left it on) and there on my television was the Power Pressure Cooker XL. I have never been as fascinated as I was right then and there (and still am). I wanted to make ribs, macaroni, chili, and everything else in a fraction of the time, in one pot no less;…
