These cute little mini frittatas are such a great on-the-go meal. I had one on my way to helping out at my daughter’s school this morning and my husband took a couple for lunch today. The kids will love it too especially if you mix in their favorite cheeses! Spinach, Bacon and Cheese Mini-Frittatas 1/2 cup grated cheddar cheese 1/4 shredded Parmesan cheese handful of chopped spinach 1/2 cup goats milk three to four slices of cooked bacon chopped or soy bacon if you want it to be a vegetarian dish. 12 eggs salt and pepper to taste Beat eggs together in a separate bowl. I wish I could say I came up with this recipe all by myself but this delicious sandwich idea comes from one of my favorite sandwich cafes here in town. I figured I could use my leftover roasted garlic chicken breast from the night before and with just a few ingredients duplicate it at home. Friends, it was SO easy to make and goes far on taste. Spaghetti Pie Recipe
Ahhhh, pasta! I love all things with pasta and cheese. So does my daughter. My son eats nuggets. And tenders. A few other items but basically he’s going to cluck one day *lol* From lasagna (roll-up’s too) to manicotti and all the in-betweens. I make an awesome baked spaghetti too – there is a difference between spaghetti, baked spaghetti and spaghetti pie.
