    Lately I have been looking for vegetarian options and came across a delicious pre-cooked grain from Melissa’s Produce… quinoa (pronounced KEEN-wah). You’ve probably had it at your favorite healthy restaurant or even tried it at home. Once I discovered that I rather enjoyed the flavor I went searching to learn more about it.       These cute little mini frittatas are such a great on-the-go meal.  I had one on my way to helping out at my daughter’s school this morning and my husband took a couple for lunch today.  The kids will love it too especially if you mix in their favorite cheeses!     Spinach, Bacon and Cheese Mini-Frittatas 1/2 cup grated cheddar cheese 1/4 shredded Parmesan cheese handful of chopped spinach 1/2 cup goats milk three to four slices of cooked bacon chopped or soy bacon if you want it to be a vegetarian dish. 12 eggs salt and pepper to taste Beat eggs together in a separate bowl.  Then place…
