Stuffed Bell Peppers
Happy Summer! I hope you are enjoying your summer and getting some sunshine! Last week Melissa’s Produce sent over some fresh summer fruit and vegetables and they had the most gorgeous red bell peppers that were calling my name to make some stuffed peppers! I have to admit I haven’t made stuffed bell peppers before! I have always wanted to and found this easy recipe off Food Network and made some adjustments which I have included. Bell peppers are low in calories and exceptionally rich in vitamin C and other antioxidants, making them an excellent addition to a healthy diet. Delicious Roasted Garlic Chicken and Brie Sandwich Recipe
I wish I could say I came up with this recipe all by myself but this delicious sandwich idea comes from one of my favorite sandwich cafes here in town. Delicious Grilled Sea Bass Quesadilla Recipe
Back in the day when most of our friends didn’t have kids, we would meet up quite a bit for dinner and drinks. I can still remember playing Cake and Beck on rewind late into the night. His dad and him would go deep sea fishing quite a bit and he would bring us fresh sea bass and grill it on the barbecue and then place the fish in tortillas with some cheese. They were the best sea bass quesadillas. I have no idea why I have waited to make this meal again…

Homemade Linguine and Clams Recipe
Last night my in-laws treated me to a favorite recipe that’s been in their family for almost 50 years and I was in heaven! Linguine and clams is one of my all-time favorites and when they heard that I love this meal they made a huge dish of it for all of us to enjoy. My father-in-law received a recipe gift box filled with recipes (remember when they use to give those out?) when he was working for a bank over 40 years ago as a giveaway for their employees. Though not all the recipes stuck around this one is in their top 5 and I can see why. If you like linguine…

A Dinner Success!
There are few dinners in our household that please everyone. My three children span the spectrum of culinary preferences. My 11 year-old won’t tolerate chili or anything cumin-scented, but my 8 year-old is a big fan. However, this same eight year-old is not a taker when it comes to casseroles or sauces. And don’t get me started on my extremely finicky four year-old…how he is such a robust little man is a mystery to me. So when I happen to make a dinner that everyone eats with gusto, well I just have to share! I feel it’s my duty as a fellow mom. We’re all in this together, right?…
