One of my favorite meals is a Nicoise salad because it has a great combination of goodies – great sources of protein – canned tuna and eggs, greens, olives and much more! When my husband offered to make me this salmon version I was super excited! In my opinion this is the perfect meal – especially on a warm summer day! This week my ever-growing daughter asked to have steak for dinner. It reminded me of the first time she ever had meat – like right off the grill ribs.
