      Nothing quite says summer like shrimp tacos while sipping on an icy cold beer if you so please!  We found this delicious recipe on Pinch of Yum who brought it back from a trip she took to California.  We do know how to eat our tacos out here that is for sure and you’ll find so many different types of tacos here in SoCal!     This shrimp boil in foil is a new recipe we tried out this weekend and I absolutely love it so had to share with you all! My husband found it on Tasteful Adventure and this no-mess dish is amazing! It takes like 20 minutes to bake in the oven or barbecue (our option) and there is not big mess to clean up!       Using left-over hard cooked eggs….. I got a glimpse of summer during the kid’s Spring Break and I liked it! But, back to the real world and that means using up holiday leftovers, grocery shopping, packing lunches and making dinners that can extend into said lunches. My Monday night meal usually consists of some version of spaghetti and meatballs (due to my teenage son’s disproportionate love and adoration of this meal), but this week, I had extra hard-cooked eggs the Easter Bunny left behind that I needed to use.     Delicious Spinach and Beef Lasagna Recipe

        Years ago I had a friend tell me she’d make homemade lasagna all the time using the no boiling lasagna noodles and that it tasted great! Inspired,  I ventured to try to make this rather intimidating dish.  It was intimidating to me since it seemed so difficult to make but using the no boiling noodles makes all the difference in the world!  Since then, we make this dish every once in a while and last night we whipped it up within 20 minutes!  It is really tasty with the spinach and fresh herbs and you’ll probably have leftovers for lunch the next day.     Spaghetti Pie Recipe

    Ahhhh, pasta! I love all things with pasta and cheese. So does my daughter. My son eats nuggets. And tenders. A few other items but basically he’s going to cluck one day *lol* From lasagna (roll-up’s too) to manicotti and all the in-betweens. I make an awesome baked spaghetti too – there is a difference between spaghetti, baked spaghetti and spaghetti pie. Making any of those with my daughter takes me back to the summer’s I spent up north with my Gramps. He was a great cook and I spent hours upon hours with him in the kitchen.
