    Baked Okra

    March 2, 2020 /

It’s a great time of year to make some delicious Southern food and this incredibly easy baked okra dish is one you’ll want to try out! It makes a great snack or side dish. Seasoned with paprika, salt and a pinch of cayenne, it makes a great addition to any Southern dish. Okra has been one of those vegetables I’ve wanted to make but wanted a healthier version than the fried okra recipes you see everywhere. So when I came across this simple, three ingredient dish on cooktoria dot com, I figured now was the time to try it out. Melissa’s Produce sent over some staples such as their yummy…

RECIPE :: Chef Debbi Dubbs Apple Pecan Salad with Goat Cheese

    March 4, 2019 /

Recently I’ve started collaborating with Melissa’s Produce which is headquartered in Los Angeles.  It’s funny how things come full circle as I had contacted them over 20 years ago on behalf of a Japanese company I worked with who sold medicinal mushrooms.  Of course I love the name of the company (ha), but honestly I appreciate that they offer such a large array of unique and delicious produce.  Last week, I had a chance to meet Chef Debbi Dubbs at her “A Little Book of Cheese” book launch event held in Melissa’s Produce demo kitchen and sample some of her recipes. We tasted several of the dishes listed in…

Enjoy an Easy Family Dinner with a Sandwich Bar

    September 17, 2018 /

Today’s post is sponsored by Eckrich Deli Meat but all opinions are my own. Now that school is back in session (yay!) moms can heave a big sigh because we now have a little extra time for ourselves which is always a good thing. I am always looking for simple, yet healthy meal options that don’t take a ton of time to prepare.  That is why sandwich night is always a big hit in our house.  We like to put out some ham, Swiss and cheddar cheese, lettuce, tomatoes, roasted bell peppers, yummy olives and pickles, a variety of bread, and everyone can pick and choose which type of sandwich…

Slow Cooker Mexican Shredded Chicken Soup

    May 23, 2018 /

One of my favorite meals anytime of the year is soup! We wanted to try out a new slow-cooker recipe and found this one on Food Network courtesy of Ree Drummond.  Love her and the recipes she creates!  She doesn’t like to skimp at meals and this soup is super refreshing with the lime and tomato base but also really hearty! And who doesn’t love to throw everything in the slow cooker and head out the door for the day.  Super easy recipe and it tastes even better the next day.   You will need: 2-3 boneless, skinless organic chicken breasts 1 teaspoon chili powder 1 teaspoon ground cumin…

    Easy Homemade Chili Recipe

    February 5, 2018 /

Americans across the country are celebrating Super Bowl Sunday today!  Who are you rooting for?  A tradition that started with my dad that we’ve continued in our family, is to make our homemade chili for game day.  This is one of our favorite recipes to date because it has the right mix of ground beef, beans and some vegetables.  Originally found on Genius Kitchen with some tweaks.  Enjoy and have a super awesome day! INGREDIENTS 1lb ground venison or 1 lb ground beef or 1 lb ground turkey (can be optional if you prefer vegetarian chili) 1 onion diced 1 green pepper, diced (if making vegetarian chili would add a red pepper, diced…

    Slow Cooker Vegetarian Tortilla Soup

    November 26, 2017 /

Tis the season for soup!  Though I love to eat soup all year long (our local Pho place knows my daughter and I by name) and we are big fans of Ramen, Vietnamese soup, vegetable soup… heck, I don’t think I’ve come across a soup I didn’t like.  We wanted to try a new soup and came across a yummy recipe for Mexican Tortilla Soup.  We tweaked it a bit and I have to say it is one of my favorite soups we’ve made so far!  Super easy if you are short on time.  Just put everything in the slow cooker on high for three hours and you will…
