    Stuffed Bell Peppers

    July 21, 2020 /

Happy Summer! I hope you are enjoying your summer and getting some sunshine! Last week Melissa’s Produce sent over some fresh summer fruit and vegetables and they had the most gorgeous red bell peppers that were calling my name to make some stuffed peppers! I have to admit I haven’t made stuffed bell peppers before! I have always wanted to and found this easy recipe off Food Network and made some adjustments which I have included. Bell peppers are low in calories and exceptionally rich in vitamin C and other antioxidants, making them an excellent addition to a healthy diet. One medium-sized red bell pepper provides 169% of the Reference…

Sauteed Peppers, Onions & Mozzarella over Quinoa

    March 24, 2020 /

Lately I have been looking for vegetarian options and came across a delicious pre-cooked grain from Melissa’s Produce… quinoa (pronounced KEEN-wah). You’ve probably had it at your favorite healthy restaurant or even tried it at home. Once I discovered that I rather enjoyed the flavor I went searching to learn more about it. I think you’ll find it’s history and nutrition benefits as interesting as I did! Quinoa was an important crop for the Inca Empire. They referred to it as the “mother of all grains” and believed it to be sacred. It has been eaten for thousands of years in South America and only recently became a trend food,…

    Slow-cooker Shredded Chicken Tacos

    May 8, 2018 /

To celebrate Cinco de Mayo this past weekend we went in search of the easiest taco recipe we could find.  We didn’t want to spend too much time in the kitchen when we could hang out by the pool right?!  And let me tell you – this is not only the easiest slow-cooker recipe you will find but seriously one of the best!  My husband joked that he was doing manual labor by having to scoop out the measuring spoon from the spice jars but seriously if you are in need a meal you can just toss in the crock pot and head out the door, you’ve found a good…

    Slow Cooker Vegetarian Tortilla Soup

    November 26, 2017 /

Tis the season for soup!  Though I love to eat soup all year long (our local Pho place knows my daughter and I by name) and we are big fans of Ramen, Vietnamese soup, vegetable soup… heck, I don’t think I’ve come across a soup I didn’t like.  We wanted to try a new soup and came across a yummy recipe for Mexican Tortilla Soup.  We tweaked it a bit and I have to say it is one of my favorite soups we’ve made so far!  Super easy if you are short on time.  Just put everything in the slow cooker on high for three hours and you will…

For many, choosing a gluten-free diet is a necessity due to health issues.  I do find I feel better if I minimize the amount of foods that contain gluten.   You don’t need to feel deprived this holiday season with these yummy treats! Here are some of our favorite gluten-free and vegan sweets we found.  Which recipe do you want to try out this holiday season?   Gluten-free and Vegan Chocolate Peppermint Cupcake A friend made some of these and posted some pictures on her Instagram feed.  Anything to do with chocolate draws me in and she was sweet and dropped one off at my doorstep (Thank you Megan!).  Our…

Meet Vivian Howard from “A Chef’s Life”

    October 20, 2015 /

Have you ever dreamed of selling everything and moving to a slower-paced town?  I have to be honest, we have entertained that idea a couple times!  It always gets back to what type of work would we do!  I’d love to have a farm where we grow our own food – but let’s be realistic here, I don’t know if I am cut out for that.  But one woman, Chef Vivian Howard surely is!  I love her story and think you will too – along with the tasty okra recipe she shared with us! PBS’s A Chef’s Life, the character-driven docu-series that takes viewers inside the life and kitchen of Chef Vivian Howard and her two restaurants…
