      Quinoa Stuffed Bell Peppers: As a kid, one of our family’s stand-by dinners was stuffed bell peppers. My mom learned how to make them from my dad who learned from his ma so this is a true family recipe passed down not by written recipe but by lessons in the kitchen. The peppers were green and stuffed with a ground beef, onion, white rice and chili powder concoction.     Sometimes we all need comfort food. Hearty, warm and satisfying, it’s easy to make and easy to eat. When the nights get cold and it’s dark outside I love to make this one pot sausage casserole.   1 onion diced 2 cloves garlic finely diced 200g bacon 8 sausages ¼ cup white wine 1 celery stick 1 carrot 1 cup mushrooms 1 punnet cherry tomatoes 1 can diced tomatoes     Fry onions and garlic in olive oil.         It can be challenging to get your kids to eat vegetables or anything good for them for that matter.  When I first met my would be stepchildren, their favourite thing was chicken nuggets and barely any vegetables!
