Delicious Homemade Cheese Enchiladas
Growing up in southern California you would think that naturally I had made homemade cheese enchiladas! But I hadn’t until this past weekend and all I could think was WHY?! They are so easy to make and like most things homemade, taste much better then when eating out. This is such an easy meal to put together that the whole family will enjoy and would also be great to bring to your next potluck! Enjoy! You will need: Cheddar Cheese – grate a couple handfuls Cotija cheese – to sprinkle over the top Corn Tortillas Enchilada Sauce – 15 oz. can Optional: Spanish rice – we love the…

Slow Cooker Vegetarian Tortilla Soup
Tis the season for soup! Though I love to eat soup all year long (our local Pho place knows my daughter and I by name) and we are big fans of Ramen, Vietnamese soup, vegetable soup… heck, I don’t think I’ve come across a soup I didn’t like. We wanted to try a new soup and came across a yummy recipe for Mexican Tortilla Soup. We tweaked it a bit and I have to say it is one of my favorite soups we’ve made so far! Super easy if you are short on time. Just put everything in the slow cooker on high for three hours and you will…

Perfectly Grilled Steak & Lobster Recipe
This week my ever-growing daughter asked to have steak for dinner. It reminded me of the first time she ever had meat – like right off the grill ribs. She was about 4 years old and was at a friends birthday at the zoo. The boy’s father was a chef (lucky kid!) and was grilling up some baby back ribs. I can still remember the look of surprise Kate had while eating these tasty ribs. I think she went back for thirds! To this day, we call her the carnivore because she just loves to eat meat. I try to buy grass-fed, no-hormone steaks because frankly I think they…

Some of the activities our family enjoys over the summer break include hiking, nature walks, spending time at the pool, trips to the beach, Newport Back Bay, Balboa Island, and mini-day trips. What are some of the things your family likes to do over the summer? One of the things about parenting that to be honest, did come learned the hard way, was that I need…

Vegetables: Radishes, beets, cucumbers, carrots, bell peppers, zucchini, corn, garlic, and rhubarb. What a wonderful assortment of fruits and veggies! And with school out, now is the perfect time to get in the kitchen with your kids and cook up some fresh recipes with some of these…

Recipe :: Flax Smoothie to start off your day!
Flaxseed is a great source of fiber and omega-3 fatty acids. During my studies in human nutrition I learned about the many benefits of flaxseeds. You can find ground or whole flaxseeds at your local grocery store. I use them in my daughter’s favorite pancake mix (shhh, she’s none the wiser) and mix it in recipes when I can. This morning we made a yummy smoothie using a couple of tablespoons of flaxseeds and my family is loving it. In fact, they asked for seconds! Below is the super easy recipe to try out. Flaxseeds are the richest plant source of alpha-linolenic acid (ALA), an omega-3 that may help protect against…
