    Delicious Homemade Cheese Enchiladas

      Tis the season for soup!  Though I love to eat soup all year long (our local Pho place knows my daughter and I by name) and we are big fans of Ramen, Vietnamese soup, vegetable soup… heck, I don’t think I’ve come across a soup I didn’t like.  We wanted to try a new soup and came across a yummy recipe for Mexican Tortilla Soup.  We tweaked it a bit and I have to say it is one of my favorite soups we’ve made so far!  Super easy if you are short on time.  Just put everything in the slow cooker on high for three hours and you will…

      This week my ever-growing daughter asked to have steak for dinner.  It reminded me of the first time she ever had meat – like right off the grill ribs.  She was about 4 years old and was at a friends birthday at the zoo.  The boy’s father was a chef (lucky kid!) and was grilling up some baby back ribs.  I can still remember the look of surprise Kate had while eating these tasty ribs.         Summer is here!  We officially kicked off summer break last Friday night with a game of volleyball between some moms at school and our respective kids!  And let me tell you, the moms were pretty darn serious about winning!  It was hysterical!       Did you know that June is National Fruit & Vegetables Month? I didn’t until recently, and I think June is the perfect time to celebrate fruits and vegetables. Summer yields a delicious variety of fresh produce. Here are some of the fruits and vegetables that are in season now: Fruit: Peaches, Plums, nectarines, cherries, blackberries, strawberries, tomatoes, passion fruit, melon, and apricots.     Flaxseed is a great source of fiber and omega-3 fatty acids. During my studies in human nutrition I learned about the many benefits of flaxseeds.  You can find ground or whole flaxseeds at your local grocery store.  I use them in my daughter’s favorite pancake mix (shhh, she’s none the wiser) and mix it in recipes when I can.  This morning we made a yummy smoothie using a couple of tablespoons of flaxseeds and my family is loving it.  In fact, they asked for seconds!
