What’s For Dinner? Spinach, Cheese and Bacon Frittata
This is my go-to meal when I am not sure what to make for dinner. It is really easy to put together and you probably already have the ingredients in your refridgerator so no need for an extra trip to the grocery store! That’s always a plus in my book! You can use a pie crust if you are looking for a more hearty meal but I prefer the crustless frittata since you are tasting the eggs, spinach and bacon more without the crust. Eating Gluten-Free And Loving It!
When I first started eating ‘gluten-free’, most of the foods I found to eat were nasty, with a capital ‘N’. I tried all kinds of products made with gluten-free flours, and almost everything I tried was seriously yucky. The most brutal lesson for me was at Thanksgiving.
