One of my favorite meals is a Nicoise salad because it has a great combination of goodies – great sources of protein – canned tuna and eggs, greens, olives and much more! When my husband offered to make me this salmon version I was super excited! In my opinion this is the perfect meal – especially on a warm summer day! Using left-over hard cooked eggs….. I got a glimpse of summer during the kid’s Spring Break and I liked it! But, back to the real world and that means using up holiday leftovers, grocery shopping, packing lunches and making dinners that can extend into said lunches.
