Recipe :: Easy and Healthy Mexican Salad Bar
One of my favorite meals is a really delicious salad. In fact, most days I could just eat a salad, but with all the trimmings! Though some days I am in the mood for something hearty (like meatloaf) – but that’s another recipe post! My two favorite salads are Nicose and Mexican-style salads. Our family is really making an effort to eat at home more these days because frankly, it just tastes better and much more economical! This recipe is for those days when time is short and dinner is coming up! On our way out of the theater the other night I picked up a Power Plate at Sharkey’s that included 10 oz. of natural…

“La Galette des Rois” A Traditional French Cake Recipe
Image source: https://blog.elle.fr/ras-la-toque/tag/galette-des-rois/ “La Galette des Rois” Recipe “La Galette des Rois” is a traditional and extremely popular sweet cake eaten almost everywhere in France around the Epiphany Day (January 6th), the day when the Three Kings visited Baby Jesus. Usually the younger person of the party…

Don’t get me wrong, I love to scroll through Pinterest and Instagram eyeing the amazing recipes the other (and very talented) moms have put together but I just don’t have that in me. I like easy! But that doesn’t mean with a little creativity you…

Butter Pecan Cake with Buttercream Maple (Pecan) Frosting
A crisp fall day. The smell of pumpkins and leaves in the air. And chilly. You can smell that too. Just enough to walk a little brisk or to throw on a scarf and where you pull your boots out. Whether Fall has just begun or it’s full in swing and you’re looking for a dessert for Thanksgiving or Christmas this Butter Pecan cake with a Buttercream Maple Frosting always tugs at my heart strings. It makes me want to lick the bowls (yes, plural) and sniff the air washing down the hallway; or sneak into the kitchen to see how much time is left only to hear my mom…

4 Superfood Acai Bowl Recipes
Last week my daughter and I tried out a new restaurant called Vitality Bowls that features Acai bowls filled with a variety of different acai blends and toppings. We decided to try out the Warrior Bowl I think mostly because my daughter liked the name and the employee told me it was the least sweet of the bunch. I have to tell you we both fell in love on the first bite! It was so refreshing and is a cross between a smoothie and yogurt. Add on top some healthy granola, fruit of choice and nuts. There is quite a bit of natural sugar in these bowls so if…
