One of my favorite meals is a Nicoise salad because it has a great combination of goodies – great sources of protein – canned tuna and eggs, greens, olives and much more! It’s hard enough to stay cool in these late summer months, but when you have to get dinner on the table the last thing you want to have to do is turn on the stove or oven!
