    Prosciutto and Peach Arugula Salad

    June 22, 2020 /

Now that summer is upon us I have been on the hunt for some salad recipes to try out using delicious fruit that is plentiful this time of year. One of my favorite fruit are peaches. They just taste like childhood, summer pool parties and sunshine. Melissa’s Produce sent a box of their delicious produce that included some fresh peaches. Peaches are thought to have originated in China more than 8,000 years ago and offer an array of health benefits including improved digestion, smoother skin, and allergy relief! I wanted to pair the fresh peaches with prosciutto as my teen loves this cured meat and I wanted to see if…

Sauteed Peppers, Onions & Mozzarella over Quinoa

    March 24, 2020 /

Lately I have been looking for vegetarian options and came across a delicious pre-cooked grain from Melissa’s Produce… quinoa (pronounced KEEN-wah). You’ve probably had it at your favorite healthy restaurant or even tried it at home. Once I discovered that I rather enjoyed the flavor I went searching to learn more about it. I think you’ll find it’s history and nutrition benefits as interesting as I did! Quinoa was an important crop for the Inca Empire. They referred to it as the “mother of all grains” and believed it to be sacred. It has been eaten for thousands of years in South America and only recently became a trend food,…

Brown Butter & Lemon Brussels Sprouts

    January 23, 2020 /

These days I’ve been on the hunt for really simple dishes that I can put together in no time flat. I try to have the family “eat the rainbow” and these petite purple Brussels sprouts from Melissa’s Produce are too darn cute – and tasty! They look even gorgeous in person and would add some color to any dish! This brown butter lemon recipe is amazing and literally took me five minutes to put together. Health Benefits Brussels sprouts boast high levels of many nutrients and have been linked to several health benefits. Brussels Sprouts are really high in Vitamin C which is so important, especially around flu season. They…

Recipe :: Golden Beet & Tomato Salad with Goat Cheese

    April 19, 2019 /

When people ask me about what types of diets I recommend and which side of the fence I fall on, whether I am pro-vegetarian or pro-Paleo diet, I always tell them to listen to their body.  Truly, your body will tell you when a food is working for you or not.  And if you find you are craving a type of food that ends up making you feel sluggish, bloated or just overall bad, it probably means you are allergic to it.  Our bodies, if unbalanced, will crave the very food that we are allergic to.  Go figure!   This is the case when you have a bad reaction to a…
