Healthy Recipe: Orange Breakfast Muffins

I love starting my day with a coffee and a bite of orangey goodness! It makes such a nice change from tea and toast, or cereal. I make a batch of muffins and freeze them, and then warm them up whenever I feel like one. These muffins are delicious as they are, or you can vary them by adding ½ cup of sultanas or walnuts.

 You will need:

1 large orange

2/3 cup sugar

1 egg

½ cup squeezed fresh orange juice

100g melted butter

1½  cups self raising flour

 

Directions:

Trim the top and bottom off the orange so it sits flat. Cut the orange into quarters, and then cut each quarter into halves and remove any seeds.

Pop the orange pieces (peel and all) and the sugar into a food processor, and process until the orange is finely chopped.

In another bowl, mix the egg, juice and melted butter. Gently stir in the flour, and then combine with the orange mixture.

Spoon the mixture into 12 muffin cases and bake at 200 celcius (400 fahrenheit) for about 15 minutes.

Delicious eaten warm straight from the oven, or you can put them aside and let them cool (if you can resist!).
