What’s For Dinner? Spinach, Cheese and Bacon Frittata

 

This is my go-to meal when I am not sure what to make for dinner.  It is really easy to put together and you probably already have the ingredients in your refridgerator so no need for an extra trip to the grocery store!  That’s always a plus in my book!  You can use a pie crust if you are looking for a more hearty meal but I prefer the crustless frittata since you are tasting the eggs, spinach and bacon more without the crust.  But both are great meals for a special day such as Mother’s Day and easy enough for the kids to help out with.  Enjoy!

7 Large Eggs

little less than 1/4 cup milk

1 Tablespoon flour

1/4 baking soda

1/4 baking powder

4 – 5 pieces cooked nitrate-free bacon

large handful of fresh spinach – sliced

handful of cheddar cheese

3 – 4 pieces of nitrate-free bacon (cook in oven until slightly crispy)

salt and pepper to taste

Italian seasoning – about 1 teaspoon

1 Golden Russet potato – diced and boiled until soft

 

Mix the eggs, milk, flour, baking soda, baking powder, salt and pepper and Italian seasoning in one bowl.  Once mixed, add in diced potatoes, sliced spinach, handful of cheddar cheese, and diced cooked bacon pieces.  Place in a pie dish and put in oven at 350 degrees Fahrenheit for about 20-25 minutes.  Check center to make sure the knife comes out clean.  The center should rise a bit than you know it is done!  Add a fresh salad on the side and you are set!

    Tonight I baked spinach cheese and bacon frittata. It was horrible! Italian spices do NOT belong in this and neither does cooked potato. I’m sorry I wasted 7 eggs on this and cheese. Better to make an omelette.

      Sorry to hear that Joanne! This recipe has been a favorite of our family’s but maybe try it without the spices and just add salt and pepper – you might like it better! Happy Holidays =)
