Internationally Acclaimed Pacific Rim Restaurant Makes Daytime Debut this past January. Roy’s Restaurant, founded in Honolulu by Roy Yamaguchi and famous for its Pacific Rim cuisine, announced today it is now offering a delectable new lunch menu at select restaurants nationwide. The Newport Beach, Pasadena, Baltimore and La Jolla locations will be opening their doors for lunch Monday through Friday beginning at 11 a.m. , and will feature signature dishes and new favorites starting at just $8.90.
“We are thrilled we can continue to transport our Guests to paradise and provide a ‘lunchtime oasis’ with new innovative creations,” said Mario Cernadas, chief operation officer of Roy’s Restaurant. “We’re confident long-time, loyal Guests, as well as first-time visitors, will enjoy the selections our
expert chefs have put together. There’s something for everyone.”

The Lunch Menu offers a variety of dishes:
The new menu will add much-needed ‘aloha’ to any weekday lunch break or business meeting. It features classic Roy’s Restaurant signature
plates, such as the Wagyu Beef Burger and Maui Wowie Shrimp Salad, while introducing Guests to fresh, new creations like the Seared Ahi Salad, Hibachi Grilled Salmon and Kalua Pork Sandwich. Each location will also include an exclusive menu, which features unique, local lunch options specially created and prepared by each chef partner.

You’ve Got to Go Try Out The New Lunch Menu!
Last month I was invited to try out their new lunch menu at the Newport Beach restaurant.  It was a real treat to try out the delicious lunch options.  I’ve been a fan of Roy’s since our family celebrated a birthday there last year.  The whole restaurant is geared towards making the dining experience a pleasant one from great customer service to delicious meals.  The lunch menu has a good selection of foods ranging from their popular Kalua Pork Sandwich to their Wagyu Burger.

Seafood at it’s best:
I tried the Hibachi Grilled Salmon with Cucumber Sunomono, White Rice and Japanese Rice Ponzu and the Misoyaki “Butterfish” Lettuce Wraps and found both quite good.  I want to try the pulled pork sandwich as I hear that is one of their most popular dishes!

And more good news!  Roy’s chef has shared with us their delicious Macadamia Nut cookie recipe.  Folks, I tried one at the luncheon and they are SO delicious!  Enjoy!

 

Macadamia Nut Cookies 
Ingredients Yields 2 dozen cookies

1 ½ cup flour

½ tsp. baking soda

¼ tsp. salt

½ cup butter, softened

½ cup light brown sugar

1/3 cup granulated sugar

1 large egg

1 tsp. vanilla extract

½ cup white chocolate chips

½ cup macadamia nuts

 

Instructions

Preheat oven to 325F 

In a large bowl, combine dry ingredients 

In a separate mixing bowl, cream the butter and both sugars until light and fluffy  

Next, add the egg and the vanilla extract 

Then add the dry ingredients, the chocolate and the nuts 

Using a 1 oz. scoop, place cookie dough on baking sheet leaving room in between each cookie 

Bake for 12 minutes 

The cookies may appear undercooked, but they will continue to cook as they rest
