Nutrition :: Eggs offer a powerhouse of nutrition for the entire family
Summer is so close we can taste it! And while “summer school” often gets a bad rap, Nellie’s Free Range Eggs wants parents and kids to get into the kitchen and prepare delicious egg-centric recipes during its own “Nellie’s Summer School” this June.

Easy to prepare, inexpensive and nutrient dense, eggs are one of the most versatile and nutritious meal or snack options around. Plus, they’re a great first food to get kids into the kitchen and interested in cooking at an early age. I would make an egg every morning while pregnant with my daughter (be it french toast, fried egg or egg sandwich – I couldn’t get enough of them), and still eat an egg a day! They really are the perfect food and pack so many great vitamins and minerals that your body needs (and wants!). Along with milk, eggs contain the highest biological value (or gold standard) for protein. One egg has only 75 calories but 7 grams of high-quality protein, 5 grams of fat, and 1.6 grams of saturated fat, along with iron, vitamins, minerals, and carotenoids.
For many years, eggs were considered the bad guy in nutrition because of their high cholesterol content, but after 25 years of study, it has become evident that cholesterol in food is not the culprit — saturated fat has a much bigger effect on blood cholesterol. Full-fat dairy products and fatty meats are examples of foods that are loaded with saturated fat and which trigger the body to produce cholesterol. (Source: WebMD.com).

Egg, Cheese and Bacon Corn Tortillas
Bake nitrate-free bacon in the oven on 350 degrees Fahrenheit for about 10 minutes. Check often as you don’t want to burn it!
Scramble some Nellie’s eggs in a pan using cold-pressed virgin olive oil
Saute a handful of fresh spinach til barely cooked
Add on top of corn tortilla, top with a little cheddar cheese and put in oven for a few minutes to melt the cheese
Top with bacon, spinach a little hot sauce and you are set!
Options:
Add a little (or a lot) of sour cream
Add a slice or two of avocado
Voila! Enjoy this yummy meal anytime of day – we do!
