Recipe :: Shrimp Boil in Foil

This shrimp boil in foil is a new recipe we tried out this weekend and I absolutely love it so had to share with you all! My husband found it on Tasteful Adventure and this no-mess dish is amazing! It takes like 20 minutes to bake in the oven or barbecue (our option) and there is not big mess to clean up! This makes a great dish to make at a party or Sunday night with the family.  What’s not to love?!  Seafood, potatoes, corn on the cob, andouille sausage and my favorite seafood cajun  seasoning sprinkled all over it.  It is one of my favorite dishes we’ve made!

Ingredients Needed:

1 lb Shrimp shells on (we used frozen shrimp with the tails on)

1 lb Andouille Sausage sliced thin

28 oz mixed baby potatoes quartered

2 ears corn cut into 8 pieces

2 Tbs cold pressed olive oil

3 Tbs Old Bay Seasoning

Sea Salt and Pepper to taste

You can use fresh shrimp, but I’ve found frozen shrimp to be more cost-effective. To thaw shrimp quickly just place in bowl of cold water, changing the water every 5-10 minutes.  They should be ready to go after about 20 minutes. You can decide if you want to take the tails off or not prior to cooking.

Tear off 4 large pieces of heavy duty aluminium foil around 12 inches for each and place 2 of them on each baking sheet.  Spray the foil with non-stick cooking spray.  Again, we opted to cook this dish on our barbecue but you can decide which works best for you.

 

Add the chopped potatoes, corn, sausage, and shrimp evenly among the 4 pieces of foil.  You want to make sure everything is in a single layer and not stacked on top of each other. Drizzle some good cold-pressed olive oil over it all and then add the seasoning.  We used Old Bay Seasoning and a little bit of sea salt and pepper.

The Andouille Sausage is what gives this Shrimp Boil it’s southern feel! It does a kick to it so I’d keep that in mind with the kids.  Next time we make it we will section off a part without the seasoning as it was a little too spicy for our daughter.  I think it will taste just fine if you add the sea salt and a little pepper for the kid’s section if they aren’t into spicy foods.

Next, seal up the foil on all four sides and close up the pack.  Make sure everything is completely covered if you are baking in the oven.  Bake for about 20 minutes at 425 degrees Fahrenheit.

 

If you opt to use the grill, just place the foil packs directly on the grill for about 15 minutes on high heat.

 

Delicious!  Add a baguette and you are set!  I promise you are going to love this simple but tasty meal!
