Yep, Summer is here!  My husband and I have made a pact to attempt to cook more at home because really home-cooked meals almost always taste better and the expense is quite a bit less!  I wanted to find some recipes to try out and came across these delicious and healthy meals that don’t look like they will take too much to prepare.  Enjoy your summer at the barbeque and pool!

 

 

Guacamole Bruschetta:

This would make a great appetizer for any party or meal.  Avocado’s are so nutritious and have all the good fats that help keep your skin and hair glowing!  Promise your body will be happy with all those good fats!  Recipe found at The Frisky.

 Grilled Avocado and Tomatoes:

Oh goodness – these look SO delicious just might have to make them today before the World Cup USA game!  I eat a quarter of avocado every night before bed with some good olive oil dressing because I find that it helps me sleep through the night.  Weird I guess, but I believe it helps to regulate my blood sugar and the fats keep me full through the night so I am not waking up hungry.  Avocados are considered one of the healthiest foods on the planet as they contain in excess of 25 essential nutrients, including vitamin A, B, C, E, & K, copper, iron, phosporus, magnesium, and potassium. The Vitamin C in the tomatoes and good fats in the avocados and pine nuts make this a nutritious side dish.  Recipe found on Buzz Feed.

Grilled Fish Tacos:

Yum!  Nothing says summer like fish tacos!  Growing up in southern California we are blessed to have some great (fresh) fish and these fish tacos look great!  I call fish brain food and ate a variety of it while pregnant (though make sure to check which fish is best to avoid as some contain higher Mercury counts than others). But it is a good idea to try to eat fish at least once a week to help keep your good fats and oils in your diet balanced.Recipe found on Examiner.

Superfood Recipe Salmon Sriracha:

Salmon is one of my absolute favorite meals.  Do try to avoid Farm Raised (just ask when dining at a restaurant or look on the labels at the supermarket).  Besides having less good fats, etc., farm raised salmon are given food that includes a dye so their meat will look the same as wild salmon and their meat has higher amounts of PCB’s. In July 2003, the Environmental Working Group EWG released a report stating that farm raised salmon purchased in the United States contain the highest level of PCBs in the food supply system. In the report, EWG reported that farm raised salmon have 16 times PCBs found in wild salmon. Hmmm, makes you want to spend the little extra to get wild!  This looks super yummy and was created by Gwyneth Paltrow who is a big health-advocate.  Recipe found on Self.

Beer Can Chicken Recipe:

While I tend to only cook chicken breasts, I definitely want to try more recipes that include chicken thighs as the meat tends to be more moist and tastier.  This looks really delicious and easy to make.  It includes beer in the recipe that helps bring out a unique flavor and makes the chicken extra juicy. Yum!  Recipe found on Better Homes and Gardens.

Spiced Shrimp:

We eat shrimp at least once a week and I am always looking for new recipes to try out.  This looks really delicious and could be added to the top of a healthy salad.  Recipe found on Refinery29.

Coconut Chicken with Tropical Salsa:

I can’t say enough good things about coconut!  I even put a small 1/4 teaspoon of coconut oil in my coffee every day.  It does wonders for your skin and hair plus is rich in medium-chained-triglycerides (MCTs), which your body preferentially uses for energy, leaving less opportunity for them to be stored as fat. This recipe looks really easy to make and includes this great fat that you should try to add to your diet.  I have friends who put it on toast instead of butter (haven’t tried this yet) but has a ton of health benefits.  Recipe found on Good For You Gourmet.
