Breakfast for Dinner: Cooking with Krusteaz

 

February is National Hot Breakfast Month and Krusteaz has officially named every Wednesday in February “Breakfast Night”! According to Krusteaz, a national survey found that nine out of ten Americans say they eat breakfast for dinner, with 56 percent doing so at least once a month. For families, the trend is even more prevalent as 67 percent of respondents with children in the household say they have breakfast for dinner once a month or more. A variety of factors contribute to the rising popularity of breakfast for dinner, with the main appeal being ease of preparation versus a traditional dinner meal (43 percent).  For families especially, it’s also “a fun way to break up the monotony of weekly dinner night” cited by 44 percent.

I’m a breakfast lover and so are my kids, so when Krusteaz sent us a free breakfast kit full of mixes to test, we were delighted.

What’s Cooking?

We decided to try out the chocolate chunk muffins and the honey wheat pancake mix for our breakfast night. The kids love helping so I let them mix the batter for both the muffins and the pancakes while I cooked the bacon. The muffin mix smelled just like chocolate chip cookies and we couldn’t wait for them to come out of the oven. And to the pancake mix, we added ¼ cup of applesauce and a few dashes of cinnamon.

The breakfast kit included a squeeze bottle for pancake art. I wanted to try it out so I did each of the kids initials. I found out that I loved the squeeze bottle for another reason though. My littlest likes to eat with her hands so finger food is fantastic here. Instead of making normal sized pancakes and cutting them up, I used the squeeze bottle to make lots of quarter-sized pancakes that the kids could dip and eat – no knife required. It was a hit! Oh, and the muffins were delicious. We didn’t even wait for the rest of breakfast to be done. We each had one as soon as they came out of the oven.

We paired our chocolate chunk muffins and honey wheat pancakes with scrambled eggs, bacon, and fresh berries. It was one of our favorite breakfast nights ever! And we had left-overs so we got to enjoy our muffins and pancakes the next morning too.

Breakfast for dinner is a fun and easy alternative to regular weeknight meals. With so many of us rushing out the door most weekday mornings, we don’t always have the chance to enjoy comforting, warm breakfasts together. This Wednesday night, have breakfast for dinner and pick up some of the wonderful products by Krusteaz. The muffins are great for breakfast on the go and perfect for the lunchbox.
