Enjoy an Easy Family Dinner with a Sandwich Bar

Now that school is back in session (yay!) moms can heave a big sigh because we now have a little extra time for ourselves which is always a good thing. I am always looking for simple, yet healthy meal options that don’t take a ton of time to prepare. That is why sandwich night is always a big hit in our house. We like to put out some ham, Swiss and cheddar cheese, lettuce, tomatoes, roasted bell peppers, yummy olives and pickles, a variety of bread, and everyone can pick and choose which type of sandwich they want to make.
My daughter loves our new Panini machine and likes to make ham and grilled cheese. I think this type of sandwich bring a smile to just about any kids face. She won’t even give her good ‘ol mom a bite. And my husband really likes the California Club and adds sriracha in his mayonnaise to give it an extra bite.
I’ve come across Eckrich Deli Meats recently at the Walmart deli counter. There is something about having the meat freshly sliced that just seems healthier to me. Eckrich deli meat is quick and easy, making it perfect for this recipe. Some of the available varieties are Eckrich Ham Off the Bone (gets its premium flavor from its own natural juices), Eckrich Black Forest Ham (dry cured and smoked), and Eckrich Virginia Baked Ham (traditional Virginia-style).
Family Sandwich Bar, I suggest:
Eckrich Ham (specially trimmed for consistent quality)
Swiss Cheese
Cheddar Cheese
Granny Smith Apple Slices (thinly sliced)
Optional: roasted bell peppers, olives and tomatoes
Mayonnaise
Ham and Swiss Cheese Panini Sandwich:
Put a generous supply of ham slices between two slices of sourdough bread
Add a couple slices of Swiss cheese
Top with some apple slices
Coat the top of the bread on the outside of the bread with mayonnaise so that it gets golden brown
Put the sandwich inside Panini Grill and grill for about 5 minutes until golden brown and cheese is melted. Place on a cutting board, slice up and you are set!
