The Perfect Side Dish :: Fresh Garlic, Herb and Parmesan Roasted Potatoes
We cook potatoes a couple times a week in our household. My daughter is quite obsessed with potatoes, preferring the creamy small ones, and complains that I never make enough! I texted her last night while she was at drums with a new recipe idea and her response was yes, make them, but make more than 4. That girl loves her potatoes! Luckily, Melissa’s Produce sent over three bags of their medley creamer potatoes and some fresh garlic and we made garlic, herb and Parmesan potatoes to go with our steak dinner.
Potatoes are good for you!
Potatoes are a great side dish for any occasion! Not only are they fairly inexpensive, potatoes are rich in compounds like flavonoids, carotenoids and phenolic acids. These compounds act as antioxidants in the body by neutralizing potentially harmful molecules known as free radicals. When free radicals accumulate, they can increase the risk of chronic diseases like heart disease, diabetes and cancer.
They may also improve blood sugar control because they contain a special type of starch known as resistant starch.
This starch is not broken down and fully absorbed by the body. Instead, it reaches the large intestine where it becomes a source of nutrients for the beneficial bacteria in your gut and research has linked resistant starch to many health benefits, including reducing insulin resistance, which, in turn, improves blood sugar control.
And aside from being nutritious, potatoes are also very filling. In one study, 11 people were fed 38 common foods and asked to rate foods based on how filling they were. Potatoes received the highest fullness rating of them all. (Healthline.com).

Fresh Garlic, Herb and Parmesan Roasted Potatoes
Ingredients:
2 bags (1.5 lbs) of Gemstone Potatoes – sliced in half
2-3 tablespoons cold-pressed olive oil
5-6 garlic cloves, minced
1 teaspoon dried thyme or 3 teaspoon fresh thyme (I prefer fresh when I have them available!)
1/2 teaspoon dried oregano or 2 teaspoon fresh oregano
1/2 teaspoon dried basil or 2 teaspoon fresh basil
1/3 cup grated Parmesan. Fresh tastes best so try to get a block and grate as needed
Kosher salt and freshly ground black pepper – to taste
2-3 tablespoons unsalted butter (my daughter loves butter so we tend to add a bit more)
2 tablespoons chopped fresh parsley leaves
Directions:
Preheat oven to 400 degrees Fahrenheit. Lightly oil a baking sheet so they don’t stick.
Place the potatoes in a bowl. Add olive oil, fresh garlic, the herbs and Parmesan and season with salt and pepper to your liking. Gently toss.
Place on a baking sheet in a single layer.
Put in oven and bake for about 25-30 minutes or once golden brown to your liking. I have found that the darker, purple potatoes need a little bit more time so be sure to check those first.
Pour melted butter over the potatoes, mix and serve.
Garnish with parsley if desired. Enjoy!
