      Earth Day is just around the corner. Every year on April 22nd, millions of people celebrate this beautiful planet we call home. Since it falls on a Wednesday this year, you may find it difficult to pin down an event on the exact day, but the weekends before and after are full of fun and educational environmental events.         It is always fun to see what friends from high school end up doing with their lives!     Yesterday, a friend told me about this great Roasted Garlic Chicken Recipe that her whole family loves and that it is really easy to make.  I am always up for simple and healthy recipes that my family will actually eat.  My husband is not a big meat or seafood eater (yes, makes for interesting dinners) so I have to look for recipes that he might like as well.  My daughter is fairly easy to please as long as it isn’t too spicy.  When I heard what was included in this recipe: chicken, potatoes, garlic, tomatoes, fresh thyme, olive oil, salt and pepper  I was sold.  That is a fairly easy shopping list so…
