With summer upon us it can be tough finding the time (or energy) to make dinner so I have been on the hunt for really simple yet healthy meals I can make in a moments time. Last week I picked up a premade Italian Chopped Salad at the grocery that included all the makings (Romaine Lettuce, Brocolli, Red Cabbage, Green Onions, and Parsley) for a yummy Italian salad. I have struggled with my weight ever since I was little. I’ve been on every diet from Weight Watchers to Jenny Craig. I even went as far as getting lap-band surgery eight years ago. I did manage to lose around 140+ pounds in about eight months. I was then blessed with the pregnancy of my first and only child and ended up gaining almost all the weight back during my pregnancy.
