What’s For Dinner? Spinach, Cheese and Bacon Frittata
This is my go-to meal when I am not sure what to make for dinner. It is really easy to put together and you probably already have the ingredients in your refridgerator so no need for an extra trip to the grocery store! That’s always a plus in my book! You can use a pie crust if you are looking for a more hearty meal but I prefer the crustless frittata since you are tasting the eggs, spinach and bacon more without the crust. This is one of my favorite soup recipes because really, what’s not to like about lentils, bacon and vegetables? I am such a fan of lentils I am always on the lookout for a recipe that calls for them.
